Sick again!

No matter what I do, it seems that I can't catch a break. 
I go to sleep Friday night looking forward to the long weekend, just to wake up in the morning all swollen and stuffy!!! Another cold! 

Enough is enough already! All my weekend plans fell through, I decided to stop everything and take care of this cold once and for all! 

 One thing that makes me feel better when I have a cold is so drink hot beverages, specially tea and chamomile with a teaspoon of honey......aaahhhh! It's good when I need to go to sleep and I feel either too stuffy or my nose won't stop running.....instant bliss! 

 But during the day I feel restless and I can't stop thinking of things to do, the kids need this and that......what is a mom to do?? 

One thing that I found soothing is eating a good bowl of green or red curry at my favorite Thai restaurant. BUT.....I'm cheap and going to the restaurant every time I have a cold at this pace is really not doable, plus today the restaurant was closed!!! 
So I scoured the local grocery store and found the ingredient to make my own curry!! 
It's pretty easy actually! All you need is this:
  
Coconut milk, green or red curry paste and my secret ingredient, tabasco. 
Lately I seem to prefer green curry, but it's really a phase, I like them both. 
The tabasco, I like it as it gives it a spicy kick and trust me, if you have a cold you want something like this: hot, creamy and spicy.....clears your sinuses right up! 

I have to thank my friend Eva for introducing me to Thai food that by the way is gluten free and way healthier that any other food out there. 
Also, thanks to my friend Aggie that directed me to the appropriate aisle of the grocery store so I could do curry in my own kitchen. 

What I usually do is during the weekend I boil a can of coconut milk, stir in 2 tablespoons of the curry paste, a little bit of tabasco and voila', the curry is made. 
Then throw in whatever left overs I have, usually veggies, pieces of chicken or shrimp, boil some rice and pour it over. 
 But I also tried it over left over spaghetti noodles today and once I sprinkled a spoon of the sauce over my blend boiled tilapia and it was delicious! 

Well, I guess you got the gist, I love this stuff everywhere and wanted to share XO

New favorite snacks

I was weighting my self again and noticed that I'm still under 145 lb so, I'm happy about that. I still get the munchies from time to time and I found my self hooked some Chex trail mix and wanted to share.

The chocolate turtle mix is definitely a favorite now:

  

I recently found a limited edition mix called "Cocoa" with marshmallows.....YUM

Can't find a picture on line, so I had to take a photo of the {almost empty} package I have home.


It's a limited edition that will around only for the holidays, so they will be gone soon and I will be sad soon.......oh well! Such is life! 

I was drawn by Chex in the first place because is one of the few company that has gluten-free cereal that you can easily find at the grocery store and won't cost an arm and a leg. 

Even tho the mixes I'm currently eating are not gluten free, I noticed that as long as I eat the recommended serving size, it doesn't bother my tummy. 

They keep my need of chocolate satisfied without breaking my weight loss plans: win-win.

Randomness Saturdays

Ok, just like the past Saturday, I really don't have a topic for a whole post, so I will just go ahead and post bits and bolts LOL

♥ Like always starting personal: I'm really excited because my youngest daughter, Michelle, will start school next Monday. Yup, she got in a pre-school program that will help her in the language and social area to get ready for kindergarten. She's really excited about it and she's running around the house with a back pack on her shoulders and big girl panties (she's not fully potty trained yet!) waiting for the school bus to come and pick her up!

♥ This also means that while I will have a crazy breakfast time, trying to get both of my kids ready for school, with lunches ready and waiting for 2 buses to come and pick them up, once they're gone I will have the house and me for myself....well at least for 2-3 hours. And while I think I will enjoy a little bit of freedom and will use that time wisely to take care on my business, I can't help thinking that I will also feel really lonely...will see!

♥ We also got really sloppy on Gabriel's diet for the last month and it shows: he got in trouble in school for acting in rage and he also lost all the 5 pounds that he gained in 3 months of diet. Major fail! We got back on track immediately and the gluten effect is slowly wearing off. Also, the doctor seems to think that Michelle could be intolerant to gluten too, so we definitely need to stock up on those gluten-free food. Gluten, can you please get out my life already?????

♥ Talking of business: I want to expand and try to wholesale. I think will be fun, tho very stressful, but I definitely wanna try. I already developed a line sheet and can't wait for orders to come in to see how will I do!

♥ On a totally different note: if you're looking for some movies to enjoy during this weekend I want to share a couple of movies that I saw myself and I think they're pretty cool (thanks NetFlix!). The first movie I saw it about a month ago, it's called "Up", it's actually an animation movie and really made me think about the things that we put off daily waiting to do them one day....don't wanna tell you too much. The next movie is for the next Saturday ;)

Doesn't this bread look scrumptios??? I really think so!
And I thought you all might like it too, so I'm sharing what I've been up to lately...I'm growing my own sourdough!!

I bought the started from Yemoos and I've been delighted with all the recipes, instruction and support that I got with it.
I was even able to get a gluten-free version to meet my new diet needs with plenty info about how to go with it....I'm amazed and thrilled!
I must confess I can bake wonderful cakes and cupcakes, but I literally suck at baking cookies or bread, so I was very skeptical about it. But the started is growing and doing great and I will start my baking soon!
I swear, I will try to take pictures with you all to see before it's all gone LOL
You should try it too and share with me your creations! Can't wait to hear from you!
